i dont eat racoons and have only field dressed beaver 3 times but from my limited experience in this field ill give what help i can. the most prominent scent glands were on the inner side of the legs and armpits (for lack of a better term) the tails are delicious if you boil them and have with stew. i made beaver jerky but it didnt turn out too well... i cooked my second one on a slow roast over a fire and it was excellent , you might want to try that if you have the patience for it
I have heard that coon is a big southern thing ..BBQ .. But where are the glands ..Thank you marcraft for your input are there any glands on the back of the beaver that I need to weary about ???
