If you grow herbs, here’s a trick to harvesting them and having them on hand for quite some time (without drying them). Pick your herbs and press them into one of the slots of an ice cube tray. Top off the tray with water (keep poking the herbs down while you add the water). Make sure you mark the trays so that you know what you’ve got. Making soup, chili, spaghetti sauce? Just pop a cube or two of the herb you need into the pot while cooking.
Never thought about herbs being stored like that, thanks

About a year, maybe a little longer. After you have the cubes, put them in freezer bags and label the bags.

Thanks! My little herb garden is great! Got any tips on cilantro? I make a great salsa, tried to grow it, and it just turns into coriander, which I barely use.

When you harvest the leaves (before flowering and going to seed) clean them, dry them and freeze them. I've never grown that much, but have frozen some for a few months - worked well in the salsa.

The problem with cilantro is it doesn't make more leaves after you harvest it, it turns stemmy and woody and seedy, even if you pick the flowers, it still turns to coriander. I've given up growing it. I had even tried seeds and regrowing, but it still turns into coriander. I had so much coriander it was ridiculous. I've got the dried cilantro on hand and will buy the fresh at the store when needed. But, I can freeze the unused fresh cilantro as you stated above. This will be a huge benefit. The bottom line, cilantro is a one crop harvest and that's that. I do grow my own peppers. My family gets mad at me if there isn't a container of salsa in the fridge.
