Another thread caused me to think of some of the things my Grandmother used to make for us. I found an old cookbook called "Dutch Oven - a Cookbook of coveted, traditional recepies from the kitchens of Lunenburg". All of the recepies are hand written. Here's one that I've always liked.

Hodgepodge Stew

6 cups water
2 teaspoons salt, divided
1 pound green beans, cut into 1-inch pieces
6 carrots, cut into 1-inch pieces
3 medium potatoes, peeled and quartered
1 cup fresh or frozen corn
2 cups fresh or frozen peas
6 tablespoons butter or margarine
2 cups whipping cream
2 tablespoons minced fresh chives
1/2 teaspoon pepper
1/4 teaspoon paprika

In a large saucepan or Dutch oven, bring water and 1 teaspoon salt to a boil. Add beans, carrots, and potatoes; cook 15 minutes. Add corn and peas; cook an additional 3-5 minutes or until tender.

Drain, reserving 2 cups liquid. Set vegetables aside. In the same saucepan, combine reserved liquid, butter, cream, chives, pepper, paprika and remaining salt. Add vegetables and heat through. Makes 8-10 servings (3 quarts).

I really like stews and soups. I think you can make your food supplies stretch a lot longer using them and still have tasty and nutritious meals. Certainly you can substitute dehydrated foods for fresh or frozen.

There was actually a note that said you can add 2 lbs of cubed lamb. I've never had it with meat though.

Add a roux to this and it will keep the pangs of hunger away for a week.

I'm going to have to try this A.S.A.P..

Two things that I like to add that aren't in the original recepie are snow peas and sugar peas. Play around with it, find what you like.

For a veggie dish that does sound good but i probably would add the lamb :P
