Hello:

I have been monitoring and enjoying this forum for years. Thought is was time to join.

Here is my situation:

Hubby & I are recent empty nesters. We live in a semi rural area on 7 acres in So. Louisiana with a nice veggie garden, fish pond, a few chickens, some fruit trees, a few bee hives and a deep water well.

I own a small business in the closest town about 10 miles away. Hubby is retired. We are both in our 50's. Him being raised by a Cajun father learned very young how to hunt, fish and garden.

We (I) spent almost everyday of 1999 preparing for y2k. I stored enough of everything we could ever need or want for one year. My husband thought I was crazy.

I taught myself how to can meat, dry food, make soap, etc, etc, etc.

One big mistake I made was buying no name brands so that I could afford the quantity. Well my spoiled family turned their noses up to most of it and alot of it has since been thrown away or maybe not safe to eat after all these years now.

I have always keep some kind of a pantry with 4-6 in qty of most things but I want to go full speed ahead again in preparations to become more self sufficient.

I have been gently easing hubby back into the mind set of long term storage...at least to produce enough in our garden for a whole year. By assuring him we will save money in the long run he is beginning to listen up :-)

This time I will can and dry more of our veggies and buy less store bought, no name veggies, canned meat etc.

Enough about us. Thanks to all who post here as over the years I have learned many useful bits of info.
