I'm from Minnesota and back home the meat markets sell whats called dried beef. I really haven't come across it here in Texas. I'm trying to figure out how long it keeps and if you can freeze it. I've enlisted my sister to bring a care package but don't know the amounts cuz I don't know about storage.
Dried beef and summer sausage....I can't wait!!!!!!!

It's available here at the Amish markets. You call it dried beef but I hear it also called chipped beef.
Check the sodium content too. It's generally pretty high.

I have only seen Chipped Beef in stores. However, SOS!!!!!!!!! My favorite!!!!

They're largely the same thing. they vary a little in packaging, moisture and salt content, but I don't think by too much. I still wouldn't use any of it as sammich meat. Not without first simmering it in a gallon or twelve of water.

What i'm talking about isn't overly salty and the look and texture is similar to pastrami.

That sounds more like what the Amish sell in their butcher shops and at the farmer's markets.
