With in the past couple of weeks I think I remember someone posting something somewhere (I've searched) with regards to using vanilla extract. The post, if I'm not mistaken, had something to do with preservation maybe... not sure.

Anyway, I meant to say something the other day and got side tracked.

Regarding vanilla... If you are going to use vanilla for anything that has to do with adding to something that will be stored for a long time, be careful of which vanilla you use. A lot of vanilla extracts, the cheap ones use corn syrup as an ingredient. Depending on how much you use, I would guess there could be a problem in the long run with some sort of mold.

How do I know this, you ask? Well I make my own vanilla extract. I buy good vanilla beans, split them and put them in bottles of either vodka or cheap brandy. I age it for a few years. I have some vanilla extract that is about 5 times as strong, maybe stronger than what you'd ever buy over the counter. All in all I've probably got about 2 gallons. No additive at all in it, just booze and d@mn good quality vanilla beans.

Just look at the ingredients of what ever you are using.

Ah. Sounds similar (only different) to my recipe for Kahlua.

Using a one gallon glass jug, add
3 liters of 100 proof Stoli vodka
8 oz of instant coffee
8 cups of sugar
3 vanilla beans

Shake well (that’s right – shaken not stirred) place in closet or darkened area. Shake it up every 4 or 5 days. After about a month you’re done. Best Kahlua you’ll try. You can substitute brandy, but I prefer the 100 proof Stoli.

I make a batch of Kahlua every year around xmas and drink the last year's batch over the holidays. I love the stuff.
