Herbs for drying should be gathered in the late morning on a fine day after the dew has dried from the plants. Some herbs should be dried on trays in a warm shady place such as a linen closet, others should be hung in bunches in a dark place where it is dry, warm and airy. If you want to keep the seeds, hang the bunch head down in a paper bag.

Herbs Dried on Trays:

Bay
Basil
Camomile
Parsley (dry quickly in an oven on low)
marjoram
Rosemary

Herbs Dried in Bunches:

Mint
Sage
Tarragon
Thyme

Herbs Difficult to Dry:

Balm
Borage
Chervil
Chives
Fennel

These should be dried in a dehydrator for best results.

Attic spaces work great as well on a hot summer day.....

I have hanging drying racks up in the attic for a number of things including herbs. I just dont go up there at 3:00 in the afternoon is all.
