Put some freshly-made yogurt into a clean square of muslin laid across a strainer. Fold the corners of the muslin over the yogurt and leave it to drain overnight in a cool place. Next day put the drained curds into a bowl, beat in some fresh cream, salt and any flavoring you like!!
