Great site Rick thanks. I do the Carne Seca a little different. I slow cook the beef at 195 degrees for 25 hours over wood then simmer another 5 hours in the sauce saving the drippings. Another method i use is to roll the beef in coffee grounds and cocoa before i put it on the grille. Very important to add strips of bacon when grilling the beef out of the sauce to keep it moist. Adds a real exquisite flavor along with the natural smoke.

Thanks Rick, but you made me hungry. I had to go make a bowl of oatmeal and a pot of coffee. (good old backpacker's breakfast, yum!)
