I want to try to make some venison bologna this season. The only problem is I'm having trouble finding a recipe and technique. I have a charcoal smoker I would like to do it in. I know how to grind it and fill casings. Does the heat from the smoker cook it throughly? I heard about boiling it during the process also. Any good recipes and techniques would be appreciated.
