So I`m sitting out by the fire tonight cooking some shrimp in my pie irons wondering if anyone here uses these frequently ? If so what do you cook in them ?

Great idea! I only make pies or grilled cheese sandwiches in mine but I think I'll have to start using them for other things. :)

I just put butter and onions in with the shrimp and cooked them 3 minutes then turned the iron over and cooked for another 3 minutes

I'll be moving mine from the camping storage in the barn to the basement "power outage stuff" area for this winters inevitable storm.
I can use them in the wood stove.
