What do you always make EXTRA of for the sole purpose of having leftovers ?

For me, Its stew,, I always overdo it,, and it always taste better the next day :)

I make it with Beef, Pork or chicken with every kind of vegetable i can get hold of,,

During the heat of the summer for me its gazpacho, and my wife's lazagna.

its a cold tomato based soup.

I chop fine:
Onion, celery, carrot, broccoli, yellow squash, cucumber, green and red peppers, garlic, black and green olives

I used to use V8 but fresh tomatoes some chopped some pureed mix together. There should be enough tomato to be like the broth or liquid from soup.

Celery salt, salt and pepper, red or balsamic vinegar and tabasco.

Great with cheese and crackers. Serve chilled.

Garnish with cilantro and diced avocado.

I' would give proportions but I just buy a bunch of vegetables chop them up and add the tomato til it looks right and spice to taste. I usually end up making about a gallon and a half. It will keep for about four days then goes south real quick. We make it for group things.

If not the next in line is a cold roast beef sandwitch with sliced tomatoes, lettuce, mayonnaise, and fresh ground black pepper.

It has to be on a hearty bread no Wal Mart air bread

Either Bacon Dumpling, leftovers fried for breakfast next day served with a couple of poached eggs, or Soup. You can never make too much soup!

my mouth is watering just thinking about all the recipes my wife makes..

Vegetable soup.. we usually make a 2 gallon pot of this stuff and I can eat it every day till it's gone. Love It!
Chili, but we usually only do that when it's cold.
Shepherds pie (with cheese, onions, peas.. it's a whole meal in a pie!) Usually doesn't last very long..
Squash, tomato, and okra (poor-man's garden soup), mixed and peppered. This usually doesn't last long either. I eat it till it's gone and lick the bowl clean. One of my favorites, especially when mixed with other veggies.

Just a couple that we always fix in excess because we like them so much.

There isn't much that doesn't taste great the next day. I'm not a picky eater.

Probably my all time favorite leftover is MEATLOAF!!!! My wife makes it with a couple hard boiled eggs inside, kind of an extra special suprise when you slice into it. I am not usually a leftover kind of guy, but meatloaf is my fav

Chili, spaghetti, soup are all better the next day. Though some times I have to add a little water to them cause the thicken.

What about fried chicken. I greatly prefer cold fried chicken to hot fried chicken.

I agree on the chili, I make enough to feed an Army:chef:! But recently I have started making Olive Garden's Pasta E' Fagioli and it gets better each time you warm it up. If you are interested here is my recipe

OLIVE GARDEN PASTA E' FAGIOLI

2 tsp. oil
2/3 lb. ground beef
5 oz. onion, chopped
5 oz. carrots, slivered
5 oz. celery, diced
1 (16 oz.) can diced tomatoes
2/3 red kidney beans
2/3 C. white kidney beans
29 oz. beef stock
1 tsp. oregano
3/4 tsp. pepper
1 2/3 tsp. fresh chopped parsley
1/8 tsp. Tabasco sauce
16 oz. spaghetti sauce
Shell macaroni

Sauté beef in oil in a large pot until beef begins to brown. Add onions, carrots, celery and tomatoes and simmer for about 10 minutes. Drain and rinse beans and add to the pot. Add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles. Simmer until celery and carrots are tender, about 45 minutes. Yields 3 quarts.

Excellent recipe....perhaps better than Olive Garden's original. Make the day before serving. Much better the next day.

I decided 5 oz. of onion equaled 1 small, 5 oz. carrot equaled two run through course grate of food processor, and 5 oz. celery equaled three ribs. It is even better if you use more beef stock than is in the recipe. Be sure to use a big pot!

Give it a try and you will see what I mean.

jambalaya!! i always make a ton of it, one cause im usually not making it only for me and two cause it actually tastes better the longer it sits in the pot. so by like the third day it tastes just amazing.

SD had to mention cold pizza and beer, the pizza is on the way, can't wait to eat the leftovers tomorrow.

I am going to break the soup trend.

My favorite leftover is meatloaf. I like it fried and made as a sandwich on toasted bread, mayo, melted cheese with spiced potatoes on the side.

I often make meatloaf just to have the leftovers for sandwiches.

Nothing better than potato salat with mayo and chicken in bacon...

or mashed potato with barbeque sauce and sausage slices...
