I never seem to buy dry sausage, but I hear that some dry sausage keeps stored at room temperature for 10 years is that true........? Does anyone make there own sausage? Which style of dry sausage would store the longest? Which tastes the best? (Ken, No not Slim Jims)

I suspect that the shelf life of pepperoni is about 100 years. Really don't care for it much though.

Slim Jims ain't even good for a year anymore. :blushing:

I've had the Hickory Farms sausages last for a few years. Ohhhhh. Fry them up in equal parts of butter and marmalade.........so good!

Salamis, Chorizo and Kabanos type sausages can last a fair while. Is that the sort of thing you're talking about?

They've never lasted for longer than a couple weeks at my place! :clap:

if kept in a cool (40 - 55) dark, well ventilated place it will last years(as many as 10).
humidity is your enemy as is heat and light.

Some of the dry salami Italian style, already cured and covered with white mold, keeps well in dry, warm conditions.

Look for a Italian market, they would have good ideas. We have not been able to keep it. It gets eaten.
