Years ago I help some friends pick Elderberries and we made Jams, Jelly's and Syrup. Does anyone have any good, tried and test recipies, Also could i just juice some of them in to 1 gallon jugs and freeze them and make the syrup this winter when i want to heat the house up. Thanks. I just don't trust cook books all the time.

The wife and I juice alot of fruit this time of the year and put it into double ziplock bags before freezing it. We have plum and blackberry right now with more to come later. Don't see any reason you couldn't freeze your elderberries.

I've been watching some elderberries mature down the road from my house. My literature indicates that the unripe fruits are toxic, so make sure you don't pick any green ones!!
I've also seen several references that say the berries taste rather rank and you may want to add a sweeter juice (like plum) to the elderberries. I would refrain from sugar and other store-bought additives and just go with other natural fruit juices.
I am going to be giving this a try when the fruits mature. Keep us updated!
