There's probably a lot of reasons that they are not. Turkeys have been bred to have larger breasts (more meat), so natural breeding is difficult. Turkeys are at the "good eating" stage before they are at the breeding stage. Most recipes are written for chicken eggs, not the larger turkey eggs.

i couldn't describe the difference either, but the yolk definitely tastes different [duck vs. chicken].

Turkey eggs have a stronger "eggy" flavour. It's not unpleasant, but it does take some getting used to. I think the main reason is the quantity. Chickens have been bred to lay eggs all year round, Turkeys and other fowl are seasonal layers.

What about ostrich eggs? I've seen them on Iron chef, they have to be broken with a hacksaw.

Anyways, I imagine Winnie is right size isn't everything. Frequency of laying, time/resources needed to get the bird to breeding age, feed/egg ratio for a laying bird. They all probably play a role.

There's an ostrich farm about 10 miles down the road from us. http://www.pokanoket.com/

One of the owners also owns a local restaurant. :blushing:

First time I ate ostrich it looked and tasted just like Canadian Bacon.
