Caribou meat is my idea of wild edibles. Here's a shot of making dried meat,Dene style. It's cut into large thin pieces, smoked till dry.
Another shot of the finished product.

Is that a cold smoke process?

Nope,I just went in to check the fire & found it pretty well out,so thought it a good time to take a picture before visibility went back down.

Rick,it's not done yet. When it's completely dry it's pounded on a flat rock with a hatchet to soften it,which also breaks it up into more eater friendly pieces. It's then usually eaten with lard and salt, yummy good you're thinking, but I prefer melted bacon grease for dipping it into.Nice salty bacon grease.Naturally I'm health conscious,no lard for me.
Of course I was going to send you some but I found out that there's some sort of law against sending meat across the border, sorry:(
