I haven't been cooking a whole lot lately, but here are a couple from last week:

Non-fried chicken

I used the Hungry Girl method - coated in Fiber One crumbs.

It was a tasty coating, but it got soggy in spots. I don't know if the chicken was too wet or the crumbs too fine. Either way, I ended up putting them under the broiler for a minute or so on each side.

On the side, a celery root and carrot puree, and some asparagus.

Arizona "Baked Beans"

Homegrown tepary beans, simmered in homemade chicken stock, with some country ham, cayenne, sage, onions, garlic, and for that little touch of sweetness -- a little bit of that mesquite bean syrup I made.

Oh man are these good, and just about all of it is homegrown or homemade.

Served with a hot buttered tortilla - yum!

GS,, On The AZ Beans pic,,, I was going to a party where I was supposed to bring a dish,, I forgot all about it,, anyway,, In a panic, looking through the cupboard I found a big can of bushes baked beans,,,,, In the freezer I had a 1/2 pound of Carne Asada,,, SO,, I grilled up the meat and chopped it all up and mixed it with the baked beans, then baked it all for a bit,,, Well,, The Dish Was a BIG HIT,, IT was delicious ! Now whenever there is a family party I am asked to make my Beans !! :),,, ok now I'm hungry ! :)

Venison Tacos w/ onion, tomato, cilantro and lettice....inside those flat bottom taco shells. GF and her son will be here so I made sure I cooked up enough seasoned venison....since I have turned Jackson and his mom onto venison and rabbit meats, he cannot stand beef and other store bought meats.

Crash is a trained killer. He notices little things like that. Things that most of us wouldn't pick up on. A trail of ants, scurrying cockroaches, bed bug stains. He's observant like that. Breakfast anyone?

thanks, was delicious,, been lucky grocery wise this month, I fed the neighbors dog and collected the mail for a week and the guy gave me a thank you card with a hundred bucks in it,, boy was I surprised ! :)

I had gator for the first time last night. I have to say I was quite apprehensive and didn't want to eat it just because they are like dinosaurs, and they are real beasts.
After that first nibble, though..
Not sure what Mrs used for seasoning, but we fried it on a hot rock and it was delicious!!
We ate it all up before I thought about grabbing the camera for pictures. I'll try to get the marinade recipe and post it up.

Sorry I haven't been around much lately. Between possibly moving, and trying to get my business off the ground, I am swamped!

Anyhow, here's the last dinner pic I took:

Kubideh - A ground meat kabob, typically made with lamb. I made mine a little lighter, by using beef and ground turkey breast. It's seasoned with preserved lemons, garlic, and za'atar.

The sauce is yogurt with lemon juice, fresh garlic, and carrot tops (since I didn't have parsley).

Yes, randy this time of year sprouts are my "go-to" green. They are really easy to grow and very tasty and nutritious. Not a whole lot left in the root cellar this time of year, but we still crave that green stuff.

They look good, are they alfalfa?. I think sprouts are a often overlooked source of nutrition. growing sprouts makes everybody a farmer LOL.

I had the grandkids tonight so I fixed some Blackberry pancakes with whipped cream. The blackberries were from our vines that I picked last fall. And bacon of course.

the sprouts in the pict are a a mix of alfalfa, cabbage and radish...a pleasant combination. I also have just alfalfa, and also do lentil, beans and wheat sprouts on occasion. Spouts are really good for you and so easy to grow! i keep the growing spouts on a top shelf so they stay warm enough.

Gee average temps inside the cabin...It really depends on the temp outside. If it's -42F like last night then the floor gets pretty dang cold and even close to 32 at night when the fire is shut down. Temps go up considerably at about knee level. After I crank up the wood stove (and this morning had the other wood cook stove going for a while too) I'd say a nice 65-70 in the cabin. I've got tongue & groove board for the floor upstairs and it is a nice seal so not all the heat from downstairs heads up there like it would if it were a loft. Stays an average comfortable 55-60 up there and good for sleeping. Now if it is -50 and colder the dog water dish on the floor will freeze at night. The cabin is 20+ years old and I really need to do a bit of work resealing up the corners and the moss chinking between the logs. Maybe throw some more sod on the roof too. That might help with the freezing floor during a cold snap. But 40 and 50 below zero is pretty dang cold and that cold air just settles in eventually down to floor level.

split pea soup with a hunk of moose bone simmering on the stove. Might throw in some barley, wild rice, garlic and spices and maybe some noodles later on. Served with fresh hot sourdough bread hot from the oven.:chef:

I cooked a ham and some sweet taters on the grill. The ham was pretty good, but the sweet taters had almost no taste. If I hadn't put butter and cinnamon on them, they would have had hardly any taste. Before tonight, I'd never had sweet taters, that didn't have that sweet tater taste. LOL

1 cup milk
1 cup flour
1 tbsp melted butter
2 eggs
pinch salt

Combine flour, milk, and butter. Mix well.
Add beaten eggs one at a time.
Pour into a pop-over/muffin tin fill cups no more than 1/3 of the way

Preheat oven to 450˚ cook for 15min
Reduce heat to 350˚, without opening oven continue to cook for another 20min.

I filled the cups on these just a little to full. They did not all rise up to where they should be. (Kids already ate the two good ones).

Boiled up a potato out of the root cellar, sliced, chucked it in a skillet with a shot of olive oil. Went into the yard and cut some wild onions tossed them in with the potatos, hit em with some black pepper. Fried up three eggs (yes three eggs and all for me!), Breakfast of Champions! Or not, but it sure hit the spot. ;)

Posting in the bacon thread got me thinking about this one, so last night, I fixed bacon wrapped meatballs, brushed with BBQ sauce and cooked/smoked on the grill.

I'm actually posting this, to give a report on the BBQ sauce that I used. Sweet Baby Ray's raspberry chipotle sauce. Just tasting it, right out of the bottle, it seemed to be a bit to heavy with the raspberry taste, for my liking. (I'm not a big raspberry fan.)
Now I have to tell the rest of the story. After brushing it on, and cooking, the sauce turned into that thick sticky glaze that I think most of us like, and that seemed to calm down the raspberry taste just a little, and DANG....that stuff was GOOD!

I haven't tried the raspberry yet, but their regular sauce is the best supper market BBQ sauce, IMO. I started using it a couple of years ago when they were just starting to push it in the market place. They had really good sales on it, so I was surprised how good it was. Now it's more in line with the cost of other sauces, but I'm glad to pay the price. It's very good!

Today ,,, and for the first time I bought some Applewood smoked Bacon from the meat counter,,, I trust its good, after all its BACON ! I am thinking about grilling some to go with the burgers planned for today :) I do not have a griddle so I will just pan fry it on the grill side burner ,,,

I bought some applewood smoked bacon a couple of months back. I was actually disappointed. Well, as much as you CAN be disappointed with bacon. It just didn't have much flavor other than bacon. I mean the pinnacle flavor of bacon is...well....bacon.

Just because I'm about the nicest guy in the whole wide world AND everyone's bestest buddy I'm going to share THE most fantastic hamburger recipe this side of heaven. Enjoy.

INGREDIENTS:
1 pound lean ground beef
1 tablespoon Worcestershire sauce
˝ tablespoon liquid smoke flavoring
1 teaspoon garlic powder
1 tablespoon olive oil
seasoned salt to taste

DIRECTIONS:
1. Preheat a grill for high heat.
2. In a medium bowl, lightly mix together the ground beef, Worcestershire sauce, liquid smoke and garlic powder. Form into 3 patties, handling the meat minimally. Brush both sides of each patty with some oil, and season with seasoned salt.
3. Place the patties on the grill grate, and cook for about 5 minutes per side, until well done.

I'm with Crash. I've tried to make all sorts of concoctions but Sweet Baby Ray's is about the best sauce going. I do make a pretty good vinegar base but can't touch Sweet Baby Rays for a sauce.

I've been on this horrible, restrictive diet for about two weeks. Though I was losing weight rapidly, I decided it sucked too bad to continue. So, I was finally able to cook something good last night!

I still haven't unpacked all my spices, so I had to improvise a little. I don't know how they taste just yet. I'll let you know in about a week. ;)

I cut up two small pickling cucumbers, put the slices in the jar, and then filled it with white vinegar. They I poured off the vinegar into the pot. I added:

About 2 tsp honey
1 crushed dundicut pepper
allspice
cloves
pink peppercorns
cardamom seeds
garlic
turmeric
about 1 tsp salt

Brought it to a boil for a minute or so, added the cukes, then turned it down, and let it simmer about 5 minutes. Then dumped it all into a jar and closed the lid.

For breakfast, I cooked whole wheat oatmeal with cinnamon, brown sugar, diced apple and raisins. It was yummy, better than pre-packaged Quaker oatmeal, and a good way to share time with the kids.

Spent yesterday morning harvesting green beans from our garden. Set the guys to work this morning, stemming and snapping. While they worked, I made up 9 jars of wild blackberry jam.
Switched over to green beans once they were done. 20 pints of green beans down. Finished out the morning with 1/2 gallon of bread and butter pickles.
So much fun!!

I got a 4lb pig shoulder on the bbq. Put it fat side down, with a nice garlic, and pepper based dry rub. Give it about 3 hrs with the coals not directly under it and BAM.

1 Lb Russet potatoes
2-3 lb pork loin ( I used 1 1/2 Lb pork loin since there is only two of us)
1 yellow onion chopped
1/2 yellow onion left whole
2 garlic cloves chopped ( I used chopped dried Garlic 1 tablespoon)
2 bay leaves
5 small tomatoes peeled/cored/shopped ( I used two regular sized cans of Del Monte diced tomatoes for Chile)
2 canned Chipotle peppers chopped (seeded and ribbed)-- ( I used 3 Chipotle peppers out of the can as is)
2 tablespoons of Apple cider vinegar
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
salt to taste

DIRECTIONS Mine:

I put everything in a slow cooker and cooked it for 2 1/2 hours removed the pork then shredded it and put it back in the slow cooker for another 45 minutes

Thier

COOK POTATOES UNTIL TENDER SET ASIDE
In a large pot place the pork loin, 1 half whole onion garlic and the bay leaves bring to a boil.
reduce the heat to a gentle simmer until the pork is cooked thoroughly (approximately (45 minutes)
Shred the pork into small pieces and sit aside
IN A SKILLET
place the shopped onion cook until tender
add the shredded pork, the potatoes, the Chipotle peppers, and the tomatoes
cook until the tomatoes break down and release their juices ( approximately 15 minutes)
then stir in the thyme, vinegar, salt and marjoram
continuing to cook over medium heat until some of the liquid is evaporated ( 5 minutes)

Serve with heated Tortillas and lime optional fresh cilantro leaves

Turned out pretty good!

Recipe:

Combine a couple Tbsp of brown sugar, plus a little Sambal Oelek, grated ginger, and sesame oil in a bowl.

Toss in 2lbs beef short ribs - about 4 meaty ones, English cut, and coat them in the mixture. Let sit for 10 minutes.

Heat up a little peanut oil in a pan, on medium high heat. Brown the ribs in the oil, being sure not to crowd the pan. I had to do two at a time.

Chuck them in the crock pot, along with:

half a large onion, diced
3 fat cloves of garlic, minced
1 mild to medium pepper, chopped - I used a Cubanelle
About a pound of baby carrots, sliced in half, lengthwise
If you like mushrooms, put some of those in there too.

For the liquid:

About 2 cups of organic, unfiltered apple juice
A little soy sauce
A splash of rice wine vinegar

(The original recipe called for a diced pear and water, instead of the apple juice. There were no pears at the market. So I went with the apple juice. Use whatever you have.)

Top off with water, if needed. I had to add another cup or so.

Cover and cook on low for 8 hours.

Remove the meat, and take out any fatty bits or tendon. Use a slotted spoon to remove the veggies, and set aside.

Use a gravy separator to remove some of the fat. Or if you are a really good planner, you would make this the day before, and refrigerate it overnight to congeal the fat, and then remove it.

Pour the juice into a pot, and reduce by about half. Season if necessary. I added a little more Sambal Oelek, rice vinegar, soy sauce, and sugar. Thicken with a cornstarch slurry, if you like. I did!

Toss the meat and veggies into the sauce to coat them and warm them up.

Serve on jasmine rice, and top with some green onions and sesame seeds.

I fixed a grilled slab of pork shoulder, marinated in Tyme, garlic, rosemary and and home
dried onions. The shoulder has less fat, [trim it well] and marinate in a container overnight,
in the fridge.
Grill over med-low heat. Baste with a bit of beer when it looks dry. Cook to just past reddish-
pink in the center.

The amounts of spices is a hand scoop of this and a pinch of that. Use what you like.
Serve with garlic mashed potatoes, the stronger the better. Home grown tomatoes,
and blueberry pie with ice cream.

We were supposed to have this kefta, whole wheat couscous, and cucumber salad as one of our camping meals. However, I left the meat in the fridge. Which was just fine, since it made for a quick and easy meal when we got home.

The meat is seasoned with cumin, and a spice blend I have called Tsardust Memories (http://www.penzeys.com/cgi-bin/penzeys/p-penzeysrussian.html). You blend it it in the food processor, form it into little footballs, and then grill them on skewers. It was too dang hot for all that, so I just baked them in the oven, like tiny meatloaves.

On top is a raita - just greek yogurt, shredded cucumber, lemon juice, dill, and salt. On the side, cucumber and onion salad - vinegar, water, dill, salt, a touch of sugar, and crushed red pepper.

The couscous has dried currants, ground almonds, powdered chicken stock, and curry powder. BTW, couscous is great camping food. You can totally preseason it, add you fruit and nuts before you leave. At camp, just add the same amount of boiling water, stir, and cover for 5 minutes. Fluff it with a fork and eat.

I also grabbed a bunch of jars of things (picked onions, roasted peppers, olives, etc.) and made a little tapenade. Sliced up the leftover roll from our sandwiches, and toasted it to put the tapenade on.

Right now I'm cooking beef short ribs sous vide. First I season the short ribs with sea salt and black pepper. Then I vacuum seal them into bags. They're then cooking in a water bath (my Sous Vide Supreme)- this device is capable of regulating temperature to about 0.3 degrees. I set the temp for 135 (the top side of medium rare) and let 'em go! They will cook for 72 hours (three days, give or take). Today is the end of day two! They'll be done when I get off work tomorrow. The cool thing is that 130 or higher over a long period of time will pasteurize the food, resulting in around a 6D reduction in harmful bacteria. The long cooking times will allow the cologen to break down, rendering the meat crock pot tender, but with a twist- when it's done, it will still be a perfect medium rare!:chef: Without getting too deep into the science of food, keeping the temps below 150 will prevent most of the damage and over-keratinizing of proteins that you get with typical braising.

Sous vide is a fantastic way to cook almost every protein but also fruits and veggies, too.

If I remember before I snarf them down I'll take some pics!

Very cool, Phaedrus. I have seen some folks add a PID temperature controller to their rice cooker to make it a sous vide cooker. But I'm not quite that clever or motivated. ;)

I cooked them in a Sous Vide Supreme water bath set to 135.0 degrees F for 74 hours, then tossed them in a bowl of Famous Dave's Devil's Spit BBQ sauce and briefly cooked them on my gas grill til the sauce carmelized a bit. You need some dry heat to get the Maillard reaction working.:chef: If you've only had them braised it's quiet a trip to have them falling off the bone tender but still obviously medium rare...it sorta freaks people out!:creepy:

Well, these guys and their meat canning got me moving in that direction. I was pressed between a volleyball game this morning and a softball game this afternoon but I canned a couple of quarts of brats and 2 quarts of hamburger (1.5 lbs each). The bad news is we were running late to the softball game with about 2 lbs left on the canner so I dumped pressure. I know, I know. I knew what was gonna happen. I sucked liquid out of all four jars and one wound up not sealing. But! It was really a piece of cake ... or canned meat as it were. I used the hamburger that didn't seal for dinner and the rest will be fine. I have a bit less liquid in the jars than I would like but I'll use them first. The only thing that should happen is some discoloration. But I have a good seal on them.

Thank you for bring up the subject of canning meat. It's something I had not done and needed to try it. I still have a whole chicken and three more lbs of burger in the fridge that are earmarked for the canner.

If I was really smart, I'd figure out how to make a good compound butter for the steak, and then sop it up with the sweet potato fries. LOL

Still playing with the canning meat thingy. I boiled and deboned a 5 lb. chicken today and that made one quart. I did can up 6 quarts of broth from it but I filled one a smidge too full and it didn't seal. So it's in the fridge. So much for the 1 1/4 inch head space.

I fixed spaghetti last night with the one quart of hamburger (1.5 lbs) that did not seal and I can taste the "can". All canned meat tastes the same to me. I don't care if it's in a jar or a can. Spam is the only thing that the god's would kill for. The rest of it will keep you alive.

This is my first attempt at canning meat so I'm trying to track how much of what = what.

1 - 5 lb chicken = 1 quart
1.5 lb. hamburger = 1 quart
5 brats = 1 quart

You could probably force a 6th brat in a quart jar but five are snug and plenty for us.

I cheated. I did one of those "in a hurry" things. Threw some frozen meatballs in the microwave, then added some marinara (I like Newmans own.), put it back in the microwave long enough to heat the sauce, then put it on a sub roll, add some provolone and put it under the broiler for a few. Ta-da....meatball and cheese sub. LOL

Breakfast roll ups for the week.

12 oz cold beer
8 extra large eggs I like Eggland Best
1 lb bulk sausage I like Jimmy Dean
4 oz grated cheese I like Mexican style cheese
8 oz Medium Thick n Chunky Salsa I like Taco Bell
8 extra large flour tortillas

In large frying pan brown sausage, crumbling it as you cook it till done. Set aside and drain grease.
In same pan scramble eggs till done well.
With low or no heater add cheese, sausage and salsa mix well.
Place egg mixture in large flour tortillas, roll them up and wrap in cling wrap. Freeze.
You can pop them in the micro wave oven before you eat them.
You can adjust any quantities per your taste. Most the time I get 8 roll ups, you may get more or less.
Oh yea the beer sometimes I drink it while I cook, and sometimes I drink it after I cook.

This week I bought a couple of whole chickens. I cut the breast off into airlines (that's the skin on breast with the first section of the wing bone still attached), deboned the thighs, cut off the legs, etc. All the nicest parts I vacced into the three bags, seasoned with S&P and cooked sous vide- they got 4 hours @ 149 degrees F. I threw the necks, backs, wings, skin, bones & 1 leg that I massacred all into a stock pot and covered with water. I simmered the stock for 4 hours, then dumped it into a crock pot and let is simmer for another 10 hours. Got the loveliest stock, very gelatinous. Then the next day I reduced the 2 qts of stock down to 1 qt.

So I used half the stock to make ramen; cooked the noodles in the stock along with 1/4 of a julienned onion. During the last minute I added 3 sliced boneless chicken thighs that I'd sous vide'd earlier. Very nice!

The rest of the stock will make me a batch of cous cous tomorrow!

I had a little bit of ham left, from one I cooked the other day, so I cut off what was left, and diced it up. (It ended up being about 3 cups full.) Well....that left a ham bone with a little meat left on it....soooo I threw the diced ham, and the ham bone in a big pot, added some water, a cut up onion, and a pile of navy beans. LOL

It should be good, by this afternoon.

2d, great minds think alike. I varied a bit. Last night in a crock pot , started cooking a ham bone with meat on in chicken broth. Before I went to bed, threw in two diced onions, four diced carrots and a pound of split peas (they had been soaking in water for 5 hours). Took the bone out an hour or so ago. I added One package of garlic instant mashed potatoes. Used a hand held blender to "smooch" (that is a technical term) everything (I like split peas soup thick and creamy) . Now just letting it simmer, to be served with biscuits.

Yuppers,, I use them and other flavors of "sudden taters" to thicken soups. Just put a little in at a time and stir so you don't get lumps. If you make a potato soup, makes it dynomite thick and gooooood.

So much for the manly man soup show :)

Earlier this week, a chicken curry, with cauli, potatoes, carrots, and peas. Tonight, chili.

I just wish the weather would cooperate, so that these cold weather foods are more craveable. Still way up in the 90s here. :(

Pa said he was mighty glad to hear the weather there is tolerable. 40 and rain on this side of the big mountains. He said send the chili. He will dispose of it for you. It's dangerous to be eating that in hot weather. Gas from the beans will expand all the more. Pa said he heard of one fellah that drifted away after eating chili on a hot day. Just send it to us and take no chances.

I fixed half a boston butt. (I wonder if that is called "one cheek"?) I started of with charcoal and cherry wood, but after about two and a half hours, I ran out of good charcoal, so I wrapped it in foil and finished it on the gas grill. While I was at it, I put a coupkle 'taters on there, made a pot of baked beans, (in my new cast iron pot.) and made some cornbread. (In my new cast iron skillet.) And yes....I did it all on the grill. Dinner turned out pretty good, for a dummy cook. LOL

As usual, we went elsewhere for T-day. The only thing I had to make was deviled eggs. In addition to the regular old boring ones, I made a plate of kicked up eggs:

Yesterday, we worked in the yard ALLLLLLL DAYYYYYY. I was so flippin tired. Good thing I had some beans with smoked sausage in the crock, and greens simmering with a ham hock on the stove. It really hit the spot at the end of the day.

I don't know how I still weigh 170, after going to the gym the other day I burned 500 calories on the treadmill. Then went to McDonalds and ate three hamburgers, a medium fry and large Coke totaling 1230 calories. I figured 500:1230 was a good ratio.....
