Do what I do. :) Broaden your food horizons!

It's simple. All you do is make a list of your friends of different cultures and national origins. Obtain their phone numbers and their mother's phone numbers.

Call their mothers and ask them to make dinner for you. Beg if necessary. :blushing: Bring wine, flowers, and your girlfriend with you.

Or I could go to the chi-nee place...and get some who-flung-what.:innocent:

I had mashed tatters.

I started with tatters.

I peeled 'em, cut 'em up and boiled 'em.

Then, I mashed 'em with granny's old masher.

Next, I added butter, cheese, sour cream, chives, salt and pepper.

I cleaned out the bowl with a piece of bread.

IT WAS GREAT!

My wife's birthday is next week-end but we celebrated today. Really a great day all around.

Beer in the butt chicken
dandelion fritters
baked winter squash from last year's garden
green bean casserole
slaw
3 cheese tortellini
deviled eggs
baked bread
strawberry shortcake (I bake pie crust for the shortcake)
Iced tea

Fortunately, the computer chair is on rollers and there ARE a couple of holes left in my belt.

This is leftover night.

This is basically a leek and potato soup with leftover Ramps and Hot Italian sausage. I made this tonight without a recipe the measurements are approximate. I cook to taste when it comes to leftovers. Turned out real good. Try this at your own risk.

2 cups of leeks Cleaned and chop fine
1/2 cup ramps cleaned and chopped fine
4 lbs of potatoes peeled and cut to 1" cubes
1 lb of hot italian sausage cooked and sliced in disks.
2 cups of chicken stock
1 tbs basil dried
1 tbs majorum
1/2 tsp thyme
1 tsp butter
Celery salt
salt
pepper
hot sauce or red pepper flakes

In a dutch oven:

Heat the butter and sweet the leeks and ramps until softened, salt and pepper to taste. about 10 minutes

Add potatoes and chicken stock along with the measured ingredients. simmer for about 20 minutes.

I add the celery salt to taste (some don't like it)
salt and pepper to taste and additional herbs to taste.
Hot sauce if you like some. "heat"

Take some of the potato soup and blend it if you like a creamy soup. (we avoid dairy because of allergies)

Add the cooked sausage sliced into disks.

Heat for 10 minutes and serve.

I had a pot of snap beans and taters simmerin' with a ham hock for a couple hours, a piece of pork loin on the grill, (With dry rub.) and a small pot of rice.

The snap beans and taters were pretty good, the pork was real good, and the rice sucked. I still can't cook rice.:blushing:

Yep! Bacon bits, country crock, pepper, asparagus, cattail shoots, ramps, curly dock leaves, garlic mustard buds, and stinging nettle tops.

It was quite good.

Spaghetti: 1.5 lbs ground deer burger, 3 sliced and diced tomatoes, wild garlic and onions from the yard, a little vinegar and a heap of black pepper.
That was Thursday night supper and I ate so much I almost puked. YUM!
Anyone notice the flavor difference in wild and cultivated garlic? The wild stuff seems a bit more peppery than what we normally get at the store, and I probably used only about half as much to the same effect.

Not to me, but I let mine bleed on ice for about a week (cut the main veins so the blood escapes). Once it's in the sauce, there's not much difference in the taste.

You can get some great deals on pork tenderloin at BJ's or Sam's Club. Gotta' say I was surprised at first, but I've bought some awesome meats at low low prices at those places.

For a neat change of pace, try stuffing the pork tenderloin roast.

I got it at Smiths ,, They were having a great meat sale,,, I looked at different recipes online,, Didnt have any of the marinade stuff,,, (mostly fruit sauces) so I just used the normal stuff,, salt, pepper, onion powder, etc,,, Havent tried it yet,,, still cooking,, but it sure smells good ! :)

You can easily make your own marinades. Canned pineapple, apricot jelly, orange marmalade, you name it......... use some soy, teriyaki, or hoison sauce, or some vinegar and brown sugar. Maybe some chopped garlic.....

I make a sauce for tuna filets that has gone over really big.

Slice fresh tuna steaks about an inch thick. Lightly rub a small amount of EVO on both sides, and grill for one minute on each side. (Very rare.)

Heat up some Kikoman low sodium soy sauce and 1/2 as much water in a sauce pan. Whisk in some smooth peanut butter (Skippy! :)) until it melts and the sauce just begins to thicken. Slice up some scallions (green onions) and add them to the pan for 30 seconds and remove from the heat. Drizzle sauce and scallions over the tuna and serve with extra sauce on the side. I love this dish with a large side of Kimchee!

It's actually quite common in many Asian dishes. Often, peanut sauce (which is a "thinner" peanut butter - essentially peanut butter with added peanut oil) is used.

Coat the salmon with teriyaki and HONEY. Grill the salmon over high heat for a very short while. After you turn the salmon, reglaze the "grilled side" and sprinkle some crushed almonds (or wasabi almonds) over the top.

Theres a thought :) I can get canned Alaskan Salmon at the dollar store,, (the one where things are more than a dollar) lol,, But it Is pretty cheap,, I am going to try that,, Usually I just eat it out of the can (lol) or soak it in Vinegar and fresh onion, (its way better than it sounds) with fried Potatoes ;)

It's actually better. You get more soy taste without the overbearing saltiness.

I told you how good the varity is, in the stores around here, right? They had the Kikkomans low salt soy sauce, but there was no "chinese five spice" to be found. LOL:innocent:

They did, however have Smithfield, smoked bone in ham on sale for $1.29 a pound. I couldn't resist, so there's a ham on the grill, as we speak. :blushing:

Update;
I just ate, and I have to admit.....that was some of the best ham I've ever had!:drool: I kept it very simple and had some baked beans out of the can, (Bush's, bourbon and brown sugar) and some cut up cucumbers. (That I try to always have in the fridge, floating in some vinegar and water w/a little pepper.)

It was some dang good eatin', reheated, and kinda dry. I bet it was unbelieable, when it came off the grill! LOL

I know what you mean about the other half. Mine doesn't like anything spicy. When I say that she doesn't like anything spicy, I mean that she thinks that regular taco sauce at Taco-bell, is too hot to eat.:blushing:

Maybe I should re-word this. It had onions, bell peppers, cheese, ground pork, and bacon. It was slow cooked on a grill, getting a good dose of smoke, making the whole, greater than the sum of it's parts.:drool:

They are a good thing to keep in the fridge. I'm trying to lay off the junk, so when I want something to munch on, I get some of those. (It helps.)

I don't know much about frying them either. The last time I cooked fish, it was some striper fillets. (Striper, not stripper.) I put them in some aluminum foil, with some butter, a sprinkle of garlic salt, and a sprinkle of dill weed. Close 'em up, throw 'em on the grill, and soon, it's good eatin'.:tongue_smilie:

Dug a few, peeled off the reticular (slimy and dirty) layer and washed. Cut the roots off, and cut out the flower stalk; it's woody (might make string?). Chop up the green leaves like chives for garnish. Yep, those are deer backstrap nibblets in a secret marinade (salt and pepper).

Get yourself a real good rice cooker. Stay away from the cheaper ones that are under $50.00 - you get what you pay for. I use this one - ran me about $100.00.

Then get yourself some premium rice. I use Nishiki brand. You can get it for about $59.00 for 50 lbs or around $34.00/25 lbs. I usually buy the 25 lb. bags.

Nishiki is a sticky sushi style rice. I use it for pretty much everything that calls for rice. Follow the directions on the bag, but add about 1/2 cup of water more than the directions call for per cup of rice, even more if you want the rice "looser." You can't possibly mess this combination up. It"s perfect.

Venison, meat loaf recipe experiment.

1.5 lbs Venison
1 egg
1 cup bread crumbs.
1/2 cup A1 cracked pepper bold sauce
1/4 cup diced onion
1 tbs mushroom catsup. http://www.celtnet.org.uk/recipes/miscellaneous/fetch-recipe.php?rid=misc-mushroom-catsup
1/2 tsp sage
1/4 tsp garlic powder
1/4 tsp origano.

Combine in a mixing bowl.

Pre heat oven to 350˚
I used a cast fry pan coated with bacon fat spread the mixture in the pan
Bake for 1.25 hour.

Drain excess fat and oils.

Crumble Blue cheese or a feta on top and broil to melt and brown the cheese.

Fingers crossed.

Needs work. Smells good the cheese was good but the meat mixture needs something. The meat is a bit strong in flavor. It needs something to sweeten it up a bit. I had Sweet Baby Rays BBQ sauce with it. I liked it. MAybe add fine chopped walnuts or pecans in the mix.

I made spegatiti sauce from scratch today. first time. ive only made it with caned sauce that i doctored befofore but not from pealing the tomatoes. it came out good, better then store bought. I had trouble getting the spices right. Found out its not easy without salt. I ended up adding a teaspoon of salt. But it woked out good. And tasted good.

I used to be a grill snob. It had to be wood, charcoal or nothin'. Well, after being in the great white north I can appreciate the speed and consistency for grilling with gas for some things. Primary cooking will always be with wood followed with charcoal. Then with gas and if you can stand it, electric.

We ate fish tonight, from the weekend fishing expedition. The big ones were a bit muddy, but the bass fillet was beyond delicious. If Ambrosia could be made of meat, it would have been that bass. I ate way too much. There were enough left to eat for 2 more days. Not bad for a $10 fishing trip!

I have to break a reb taboo and admit to a cardinal sin...I cooked on an electric grill. It was brats (I'd never heard of 'em. They're like big hot dogs). I've cooked them on and in everything and nothing affects the taste.

Last night, grilled chicken souvlaki and baby bok choy, on wheat pita with a cucumber yogurt sauce.

While I was at it, I tossed a couple whole sardines on the grill, for my lunch today.

I also put on some acacia pods I gathered, to try and steam them. I still haven't worked up the nerve to try and eat one.

It was hot today, so I had cold roast chicken, some boiled new potatoes and mixed salad with the first leaves from the garden!!

I cut some pockets in some chicken boobs. Then stuffed them full of various cheeses (mine was brie, cheddar for the boy, and goat cheese for m'lady), and some local ham. Secured them with some toothpicks. Seasoned them up and browned them in a skillet. Then chucked the pan in the oven.

Meanwhile, I made a sauce, using some preserves I made from foraged figs, homegrown melon, and grocery store pears that had gotten too brown. To that, I added some apple cider vinegar, honey, szechuan peppercorns, and salt, and whirred it with the stick blender.

I also got some chard and garlic greens from the garden, and sauteed them with some meyer lemon olive oil.

Turned out pretty good, except my cheese ran out. :blushing:

I'm making a big batch of beef jerky today and tomorrow. I'm using both a dehydrator and my smoker. Next week, I'm taking the boys in my Boy Scout troop on a 50-mile canoe trip up on the Buffalo National River and I wanted a good snack to take with me. Although, as soon as the boys see what I have brought, I won't have any left.
I'm making a batch of teriyaki jerky, a batch of mesquite and just plain ole hickory-smoked.

Aren't farm eggs the best? We've been getting them for a while now, and now will never go back to those bland factory chicken eggs. :tongue_smilie:

It was a busy weekend, so I haven't cooked much. Sunday, I made some breakfast tostadas, but they got eaten before I could take any pics.

Last night we had brats, from a local pork raiser / butcher. Leftover beans, pictured above, and balsamic green beans on the side.

Tonight we're having that figgy chicken that I made earlier.

Yes....the young ones are tender. I like them, wrapped in bacon before throwing them in the smoker. That's another reason to use the young ones. Once they get a little bigger, it just takes so much dang bacon, to wrap them up! :innocent:

Grilled up some local pork chops, and some "8 Ball" zucchini from the farmers' market, and served it on some Uncle Ben's "Brown & Wild" microwave rice.

I also made some tomato jam, using the Super Sioux from the garden. MMM MM good!

Stopped in at an ethnic store yesterday - a place where they have a kitchen in the back. Got myself a couple of pounds of deep fried smoked bacon - chunks about 2" thick by 3" wide by 6" long. Oh yeah, also got myself a big fresh round loaf of bread and some fresh cheese. Butter on the bread, a cold beer........

Only ate a pound of the bacon, so I still have some left!

Finished it off with a large fried dough (malasada) from the same place.

Rendered a few pieces of bacon. Drained 1 can of diced taters, and 2 cans of green beans, and fried them in the bacon grease. Diced up some left over ham, (some....as in a bunch.) and threw it in there, with the saved bacon, and finished frying it all up. Now that was a meal! LOL:blushing:
