Familiar spring flowers; blue-violet. Flower stalk rises above heart-shaped leaves. Lower petal shorter than in following; side petals darker toward throat. 5-10 in. (12.5 - 25 cm). Found in wet meadows, near springs and bogs. Flowers April-June. Use as a salad, cooked green, soup thickener, tea or candy. The tender young leaves can be added to salads, boiled for 10-15 minutes to make a palatable cooked green or added to soups as an okra-like thickener; violet leaves are somewhat bland and are best mixed with other greens. The dried leaves can be made into tea. The flowers can be candied. Leaves are rich in Vitamins A and C.
