    A widespread hairy-stemmed biennial. Flower clusters flat-topped, lacy; often with a single purple flower in the center. Old clusters resemble birds' nests. Bracts stiff, 3-forked. Root white, smells of carrot. 2-3 ft. (60-90 cm). Found in fields and waste places. Flowers May-October. Use as a cooked vegetable. Prepare the first-year roots like garden carrots. CAUTION: Early leaves resemble Poison Hemlock but can be differentiated because the wild carrot stalks are hairy. See picture 2 below.
